Grab Your Copy Today!It was about 12 years ago when we sat in the doctors office, holding hands for comfort. The doctor was examining a swollen lymph gland in our daughters neck and making disturbing āem-hmmmā sounds every few seconds.
About 12 months beforehand I had noticed her lymph gland being swollenā¦ at the time, we were all sick, so I didn't think much about it after that. Until about 3 months later when I happened to check it again and it was still swollen.Ā More swollen? I put her on some immune support teas and kept checking it.Ā
At 4 months, it was still swollen.
At 5 months, it hasn't changed much.
My mama heart started getting worried. I talked to a friend who was a nurse and she immediately said the thing that I had been terrified to think. Could be cancer.Ā
We found a great doctor in the nearest large city (we were living outside of Nashville at the time) and made an appointment. The soonest they could get us in was 3 months, but they would put us on the list if there was a cancellation.
2 months later we were finally sitting in that doctors office waiting for some indication of whetherĀ on not this was serious. I was so worried about what might be wrong with my daughter that I really wasn't expecting what happened next.
The doctor set down his stethoscope and turned to Josh and me and saidā¦ "I want to put her on a liver cleaning diet to see if her body just needs help cleaning up her system. I find these diets work best if the whole family goes on them. Let's try it for 3 months and then check her out again.ā
Of course we would all change our diet to help our daughter, no problem!Ā Ā
But when the nurse handed me the diet requirements I almost started crying.
- No white potatoes
- No soy
- No wheat or other gluten containing grains
- No red meat
- No dairy
- No sugar
- No peanuts
- No sweeteners
- No fruit
At the time we had 6 small children and were living in a 700 sq foot basement while we were building a house. Our kitchen consisted of about 3 feet of counter, a sink, a stove and a fridge. What in the world was I going to feed everyone?Ā Ā
I jumped right into the grocery storeās gluten-free sectionā¦ but nearly everything had either potatoes or soy in it. As I searched I found a few brands and items with flours that we could eat.
I bought a package of English Muffins and was shocked by the price tag- $12 for a pack of 8 (each of us could eat only 1). When I got them home, I toasted them up, put some coconut oil on them and took a bite. I distinctly remember thinking that I should just have bought cardboard instead because it would have tasted better and cost far less.
I tried baking some gluten-free items, but there were so many different flours and extra ingredients that it was quickly overwhelmingā¦ I found one really simple recipe for oat scones and, even though it wasn't that great, just stuck to it.
We ended up on the diet for about 6 months total.
At the 3 month mark, I bought the same English Muffins again out of desperation and this time I actually thought they tasted pretty good. Everything else had been SO BAD or SO EXPENSIVE that I actually thought that $12, cardboard-tasting English muffins were a decent treat!Ā Ā
After 6 months, the doctor declared our daughter as being just fine, with just a ācongested lymph glandā and had us start to phase foods back in. What was the first food we added? Yepā¦ gluten. Thank goodness!
So, years later when a friend needed to go gluten-free for the health of a child, I had so much sympathy. Luckily, by that time I had a lot more experience in the kitchen. I went to the kitchen and I whipped up some savory sourdough pesto muffins with home ground quinoa flour and passed them to their family. They were amazed! They each asked, "Are you sure there isn't gluten in here?"
Hence The Art of Gluten Free Homemade Bread book was born.
