Meet Your Instructor
I’m Carolyn Thomas! My husband, Josh, and I live on 40 acres in Idaho where we grow, preserve, and prepare most of our own food right on our property.
When I first started keeping chickens, I immediately fell in love with those farm fresh eggs... those yolks are amazing, and the taste is out of this world.
But then winter hit...
I had no idea I would get so few eggs during those short northern winter days, but I didn’t want to go back to *gasp* store bought eggs.
After reading a few two-hundred-year-old cookbooks I learned about some old-fashioned egg preserving methods... I tried them out and was amazed at how well they worked.
I then added several other methods of preserving eggs to my toolbelt, both modern methods and historic methods. And now, I am never without farm fresh eggs (no matter how few the hens are laying).
After speaking with thousands of homesteaders I realized that I wasn’t the only person with this challenge! That’s why I created this course... so that you can also eat fresh eggs, year-round.
And the great thing is, you don’t even have to keep your own laying flock to keep eggs available year-round, you can use farm fresh or store-bought eggs!
