Why I Created Freeze-Drying the Harvest
I was skeptical when I got my first freeze-dryer. After all, people have been preserving food without fancy technology for thousands of years! And really, what was I going to do with freeze-dried candy and astronaut ice cream?
But I don't do things halfway, so I went all in on learning how to use this thing and make it work for me.
It gave me back something I didn’t even know was possible as a homesteading mom with 11 kids - my time.
No more standing over a hot stove, watching gauges and adjusting heat. Now I can make a big batch of chili, pop the leftovers into the freeze dryer, and go about my day. A few hours later, I’ve got shelf-stable meals ready to go—nutritious, flavorful, and perfectly preserved.
Freeze drying has transformed how we preserve food here on the homestead. Last year I put up more food than I ever have in my 20 years of homesteading!
BUT, the learning curve was steep. The first time I freeze-dried eggs, I did a huge batch (remember when I said I don't do things halfway?), but I didn't test them properly. When I opened the first jar to make breakfast for my family one morning, the smell made me gag.
Turns out they weren't fully done when I stored them. That sinking feeling in the pit of my stomach as the realization that hundreds of dollars worth of eggs had to be thrown out crashed over me is something I NEVER want you to experience.
