Why I Created the Confident Canning Workshop


I believe learning to preserve food shouldn't feel impossible.

You shouldn't have to piece together ten conflicting YouTube videos.

Wonder whether the recipe you found is actually safe.

Lie awake wondering if your jars sealed correctly.

Or feel like you need a chemistry degree just to preserve some green beans.

Like most of us, I didn’t grow up on a farm. I didn’t inherit land or know anything about growing and preserving food. In fact, my journey began on a tiny apartment patio where I started cooking from scratch and preserving what I could out of pure necessity! My husband Josh and I were poor as church mice with a growing family to support and very limited time.

Trying to mesh these old world skills with modern schedules can be tough. We didn’t grow up seeing homesteading “baked in” to everyday life the way our great grandmothers did. When I started out, I felt that same overwhelm and frustration you might be feeling now.

One evening, I sat down on the front porch with Josh and started crying. I said, "Where are the women who are supposed to show me how to do this?" 

And he looked and me and said, "Honey. You're going to have to become that for the next generation."

Today I preserve between 800 - 1200 jars of food every year, all using SAFE, tested, approved recipes. I don't take chances when it comes to my family's health, and I don't believe you should either. 

I want to hand you the confidence to safely preserve food in your own kitchen and give you the tools to take control of your family's health and future.

Hi! I’m Carolyn! My husband, Josh, and I live on 40 acres in Idaho with our 11 children where we grow, preserve, and prepare most of our own food right on our property.

As young parents with a quickly growing family and a desire to feed them healthy, whole foods (even on a tight budget) we knew very quickly that we were going to have to figure out how to grow and preserve it ourselves... good food was just too expensive!

I knew how to cook, but I had very little experience preserving my own food. So, I did what most people do when they want to learn a new skill.

I researched!

I checked out a canning book from the library, followed a recipe for Spanish sauce, and proudly lined those beautiful jars up on my pantry shelf.

My family loved it.

I made that recipe more than once and it became a staple in our home.

Then I discovered something that absolutely stopped me in my tracks.

The recipe wasn't actually safe.

That realization shook me.

Not because we got sick (thankfully, we didn't), but because I realized I had unknowingly put the people I love most at risk.

For a little while, I seriously questioned whether I should keep canning at all.

But if you're new to Homesteading Family, you'll soon learn that I'm a little stubborn. 😉

Instead of giving up, I got curious.

I wanted to understand why that recipe wasn't safe.

Why some methods work and others don't.

Why one recipe could be trusted while another couldn't.

And what I discovered completely changed the way I looked at food preservation.

The science behind safe canning isn't nearly as complicated as the internet makes it seem.

Once you understand what's happening inside the jar, the rules stop feeling random.

They start making sense.

And when things make sense...

Confidence follows!

I never wanted anyone else to have to learn the hard way, or have that moment where their stomach drops because they realize they put their family at risk. 

So Josh and I created Homesteading Family to give families like ours a hand up, and that's why I'm inviting you to the Confident Canning Workshop.
